Taste Receptors

Our tongues have receptors for five basic tastes: sweet, sour, salty, bitter, and umami. Successful pairings balance or complement these tastes.

In FHI v2, this drives the Balance dimension — how well a drink's acidity, sweetness and body harmonise with your dish's richness and heat.

Aroma Compounds

Over 80% of what we perceive as flavor comes from aroma. Beverages with complementary aromatic compounds create harmonious experiences.

In FHI v2, this is the Affinity dimension — we map over 200 ingredients to 12 aroma families (citrus, herbal, smoky, floral...) and score how many families your dish and drink share.

Temperature & Texture

The physical properties of beverages affect how we experience food. Hot drinks can intensify flavors, while cold ones can refresh the palate.

In FHI v2, this splits into two dimensions: Structure (weight matching — a light dish needs a light drink) and Texture (mouthfeel — crispy food often wants a crisp, effervescent drink).

How much flavour DNA do your dish and drink share? We check for shared aroma families. Every matching family is worth points — lemon in both dish and drink, herbal notes that echo each other.
