Learn About Beverage Pairing
Discover the science, culture, and art behind perfect beverage pairings
Our Mission
At Julu, we believe that every meal deserves the perfect beverage companion. We're on a mission to elevate non-alcoholic drinks from an afterthought to an integral part of the dining experience.
By combining cultural wisdom from around the world with modern flavor science, we help people discover pairings that transform ordinary meals into extraordinary sensory experiences.
We celebrate global beverage traditions while making them accessible to everyone, regardless of dietary preferences or restrictions.
The Science of Flavor Pairing
Four principles of flavor science — each one powers a dimension of Julu's Flavour Harmony Index
Taste Receptors
Our tongues have receptors for five basic tastes: sweet, sour, salty, bitter, and umami. Successful pairings balance or complement these tastes.
In FHI v2, this drives the Balance dimension — how well a drink's acidity, sweetness and body harmonise with your dish's richness and heat.
Aroma Compounds
Over 80% of what we perceive as flavor comes from aroma. Beverages with complementary aromatic compounds create harmonious experiences.
In FHI v2, this is the Affinity dimension — we map over 200 ingredients to 12 aroma families (citrus, herbal, smoky, floral...) and score how many families your dish and drink share.
Temperature & Texture
The physical properties of beverages affect how we experience food. Hot drinks can intensify flavors, while cold ones can refresh the palate.
In FHI v2, this splits into two dimensions: Structure (weight matching — a light dish needs a light drink) and Texture (mouthfeel — crispy food often wants a crisp, effervescent drink).
Cultural Context
Traditional pairings evolved over centuries, with communities discovering what works through trial and experience. Science often validates these combinations.
Every FHI scoring rule is grounded in centuries of culinary tradition — Japanese tea ceremony, Indian lassi with curry, Mexican agua fresca with spice. Science validates what cultures discovered.
How We Score It — The Flavour Harmony Index
FHI v2 translates the science above into a single 0–100 score across four dimensions
Affinity
Powered by Aroma Compounds science
How much flavour DNA do your dish and drink share? We check for shared aroma families. Every matching family is worth points — lemon in both dish and drink, herbal notes that echo each other.
Balance
Powered by Taste Receptor science
Does the drink harmonise with your dish's weight, acidity and heat? Borrowed from wine pairing: acid cuts fat, sweetness tames spice, effervescence refreshes the palate.
Structure
Powered by Weight & Body science
Does the drink match the body of your dish? A sparkling water next to a rich braised short rib is a structural clash. Weight should meet weight.
Texture
Powered by Temperature & Texture science
How does the mouthfeel of the drink interact with your dish? Crispy tempura + crisp effervescence = harmony. Creamy pasta + thick drink = clash.
When you use the Pairing Tool, every recommendation is scored across all four dimensions in real time. Click any score to see exactly why your pairing ranked the way it did.

Every culture has developed unique beverage traditions that enhance their cuisine
Japan
Tea Ceremony & Umami Balance
Japanese tea culture emphasizes balance. Green teas like matcha complement the umami-rich flavors of Japanese cuisine, while their slight bitterness cuts through fatty fish dishes.
Middle East
Mint Tea & Spice
Mint tea serves as both a digestive aid and a cooling counterpoint to heavily spiced dishes. The sweetness balances heat, while mint refreshes the palate.
India
Yogurt Drinks & Curry
Lassi and other yogurt-based drinks contain casein, which neutralizes capsaicin from spicy foods. The cooling, creamy texture soothes and complements curry spices.
Mexico
Agua Fresca & Bold Flavors
Fruit-based agua frescas provide refreshment alongside rich, spicy Mexican dishes. Natural fruit sugars balance heat while cleansing the palate between bites.
